Weekend Recipe : Watermelon + Feta Salad

I love trying new recipes especially during my work free days – the weekend.
Watermelon and feta are two of my favorite foods of all time. You can imagine my excitement when I came about this recipe while browsing one of my recent favorite food blogs . Just to clarify here, I’ve been snacking on watermelon and feta (together) my whole life but I never thought of combining the two into a salad.

To make the salad will need the following:

  • 4 cups of cubed watermelon
  • 1 1/2 cups of cubed or crumbled feta (make sure the feta cubes are half the size of the watermelon cubes)
  • 1/4 cup red onion

For the vinaigrette you will need:

  • 4-5 watermelon cubes
  • 1/4 cup of fresh mint leaves
  • 1 tsp honey
  • fresh lemon juice
  • 1/4 cup of extra virgin olive oil


Start by combining the ingredients (watermelon cubes, feta and onions) into a large bowl. To prepare the vinaigrette, combine the watermelon cubes, mint leaves, honey, lemon juice and olive oil into a food processor and pulse until it emulsifies. Pour the vinaigrette over the salad and gently toss with your hands. Recipe serves 4
