Friday Recipe : Pork Souvlaki on Pita with Tzatziki

Last night we dined al fresco. Nothing screams Summer more than Pork Souvlaki. The recipe is so easy to make and it will be on your table in under 30 minutes {oh, i just had a Rachel Ray moment, ha!}.

(makes 4-6 servings)
Marinade
1/2 cup olive oil
1/4 cup red onion, finely chopped (optional)
2 garlic cloves, minced
3 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
2 teaspoons Greek oregano
Salt and Pepper to taste
Tzatziki
2 cups of Greek yogurt (Fage or other)
1 English cucumber, peeled and finally grated
3 cloves of garlic, minced
2 tbs lemon juice
2 tbs extra-virgin olive oil
1 1/2 lbs pork loin (trim off excess fat) cut into cubes
Pocketless Pita
(we don’t use skewers because Nikolas uses them for poking – not fun!!)
The Preparation
1. Mix the ingredients for the marinate in a small bowl and pour over pork. Transfer everything into a  large Ziploc bag. Close bag and toss to coat the pork. Refrigerate at least 2 hrs or overnight. 
2. Mix all the ingredients for the tzatziki sauce in a small bowl. Cover and refrigerate at least 2 hrs.
3.Transfer the pork cubes onto a grill and cook about 8-12 minutes or until all sides are fully cooked. Once cooked, remove from grill and let rest for 5-10 minutes. 
4. While pork rests, grill pita until lightly browned (about 1 minute per side).
Serve pork souvlaki on top of pita with a dollop of tzatziki on the side.
